Chapli Kebab originated in Peshawar, the capital of Pakistan's Khyber Pakhtunkhwa province.
The name "chapli" comes from the Pashto word "chaprikh" meaning "flat" - perfectly describing
these distinctive patties. Unlike other kebabs, Chapli Kebab is known for its unique flat
shape and the generous use of fresh tomatoes and pomegranate seeds.
At Chillies, we prepare our Chapli Kebab using authentic Peshawari techniques. We use
coarsely minced beef (not ground fine) mixed with fresh tomatoes, onions, green chilies,
fresh coriander, dried coriander seeds, cumin, and dried pomegranate seeds (anardana).
This mixture is formed into flat patties and pan-fried in beef fat until beautifully
caramelized.

What makes our Chapli Kebab special is the balance of textures and flavors. The coarse
meat gives it a satisfying bite, the tomatoes add moisture, and the pomegranate seeds
provide subtle tartness. When fried, the edges become crispy while the center stays
tender and juicy - a contrast that defines great Chapli Kebab.

Our Chapli Kebab is traditionally served with fresh naan bread, sliced onions, and
green chutney. It's perfect as an appetizer or as a main course with rice or paratha.
